Butterscotch was made with brown sugar not white. The difference is the molasses that’s in brown sugar. Contrary to the name, butter isn’t usually an ingredient in butterscotch. It’s made about the same way as caramel but the flavor is different. It’s like comparing maple syrup to molasses. They’re both syrups but the comparison ends there. Butterscotch has the molasses flavor added to it that gives it depth. Not everyone likes butterscotch and I’ll bet those people aren’t big fans of molasses either. My mom loved to add a bit of dark rum into her butterscotch sauce at Christmas. I have to tell you, the combination is hella good!

Its another party food- this time for grownups, quite popular in the 1970s and 1980s in Ireland, but seldom seen since. I’m guessing from the name that it was introduced from France at some stage, and for a time- roughly 40 years ago- no self respecting dinner party was complete without these things. It may be in the recent memory of people who emigrated from Ireland in the 1970s and 1980s- but its no longer cherished in Ireland as it once was.
