A lot of what is perceived as Irish-American dishes- are brought out on St. Patrick’s Day. But St. Patrick’s Day in Ireland was a religious festival imploring the great saint of our island to bestow his grace upon the poor downthrodden Irish- and not a pagent like it is today. The whole Irish parade- complete with céilí dancing, music and much more besides- is an American invention- with the first St. Patrick’s Day parade recorded in Boston- not in Ireland at all.

When I was younger, I’d rush home after school, excited to pop some piggies on Halloween, Christmas, Valentine’s Day, the Lunar New Year- almost any holiday you can think of was featured in a set of themed Angry Birds levels in Seasons. I adored the fact that the theme music and menu background changed every time you finished a certain level from a specific set.

Contrary to the name, butter isn’t usually an ingredient in butterscotch. It’s made about the same way as caramel but the flavor is different. It’s like comparing maple syrup to molasses. They’re both syrups but the comparison ends there. Butterscotch has the molasses flavor added to it that gives it depth. Not everyone likes butterscotch and I’ll bet those people aren’t big fans of molasses either. My mom loved to add a bit of dark rum into her butterscotch sauce at Christmas. I have to tell you, the combination is hella good!

Now the Jewish butcher shops would not have stocked bacon (or any pork products)- so the Irish, instead of going further afield, would have tried to buy a local meat with which to recreate their beloved bacon and cabbage- and that meat very often was corned beef. As meat was a treat- it was devoured with relish- and a whole new myth about corned beef and cabbage grew up.
