What we’ve discovered recently is that adding a bit of salt to caramel activates two parts of our taste buds and makes that sweet and salty connection really amazing! Just like sweet and sour, the combination of more than one taste bud makes for a delicious explosion. Chefs have been doing this for years. I’ve added salt into my apple pies because I add ingredients that end up making a caramel sauce as the pie bakes. The addition of the salt really amps up the flavors and gives the pie an added note of flavor. Some people will add butter to caramel, but it’s not necessary.
