My mom made butterscotch topping and she also made caramel for dipping apples at Halloween. She made a lot of candy from scratch when I was growing up so I’ve always considered a candy thermometer a “must have” in my kitchen. Caramel was made with white sugar only then scalded cream was added after the caramel was cooled a bit. At that point she decided if it was going to be used as candy, sauce or a coating.

Its another party food- this time for grownups, quite popular in the 1970s and 1980s in Ireland, but seldom seen since. I’m guessing from the name that it was introduced from France at some stage, and for a time- roughly 40 years ago- no self respecting dinner party was complete without these things. It may be in the recent memory of people who emigrated from Ireland in the 1970s and 1980s- but its no longer cherished in Ireland as it once was.

Its not rocket science- most of us have helped our mothers with the cabbage in the kitchen while still in preschool. The US version tends to feature copious amounts of melted butter- the Irish version, not.
