Most people these days do still make stews- featuring minced beef rather than cubes of stewing beef (which are actually quite difficult to find). Now the Jewish butcher shops would not have stocked bacon (or any pork products)- so the Irish, instead of going further afield, would have tried to buy a local meat with which to recreate their beloved bacon and cabbage- and that meat very often was corned beef. As meat was a treat- it was devoured with relish- and a whole new myth about corned beef and cabbage grew up.
